MEAT STUFFED PORTOBELLA MUSHROOMS
Ingredients
- 2 LARGE PORTOBELLA MUSHROOMS
- 1/2 CUP OLIVE OIL
- 1 SMALL ONION CHOPPED
- 1/2 LB GROUND LEAN BEEF
- 1 STICK CHORIZO (MEXICAN)
- 1/3 CUP WHITE WINE
- 1/3 RED BELL PEPPER CHOPPED
- KOSHER SALT
- FRESHLY GROUND PEPPER
- 1/3 CUP BREAD CRUMBS
- 1/3 CUP PARMAGIANO CHEESE
- 1 SMALL TOMATO NO SEEDS
Directions
- USING A NON STICK PAN, ADD OIL. WHEN HEATED ADD ONIONS, BEEF, CHORIZO AND WINE. COOK UNTIL BEEF IS NO LONGER PINK
- SEASON WITH SALT AND PEPPER.
- ADD BREAD CRUMBS, CHEESE AND TOMATO TO MEAT MIXTURE.
- HEAT TO INFUSE EVERYTHING TOGETHER.
- RUB MUSHROOMS WITH OLIVE OIL, STUFF WITH ALL INGREDIENTS AND PUT IN OVEN FOR 20 MIN AT 350 DEGREES.
