    Meat Loaf with Sweet Potatoes and Pineapple

    No boring meatloaf dinner here! Sweet potatoes and pineapple slices baked with meatloaf make for an unusual twist in this meal-in-one-dish. Use all beef, or part ground pork, reduced-fat pork sausage, veal, etc. Tomato paste may seem an odd ingredient for meatloaf and too concentrated, but it works well here for flavor, sweetness and color. The baked sweet 'tatoes and pineapple are divine! Next day.... enjoy meatloaf sandwiches!

    Ingredients

    • 2 pounds ground beef 85% to 93% lean (or half beef and pork or other preferred meat combo)
    • 1 onion, chopped fine
    • 3 garlic cloves, minced
    • 2 eggs, beaten lightly
    • 1/4 cup fresh parsley, minced
    • 1/3 cup dry bread crumbs
    • 1 teaspoon chili powder
    • 1 teaspoon cumin
    • Salt and Pepper to taste
    • Optional: Red pepper flakes - a pinch or to taste
    • 3 ounces tomato paste (6 tablespoons or one-half small can)
    • 1/4 cup fresh grated Parmesan cheese
    • 2 pounds sweet potatoes (select plump rather than slender ones)
    • 1 20-ounce can pineapple rings, drained (use juice for other purposes)

    Directions

    1. Preheat oven to 350 degrees F. Lightly spray a large baking dish, about 10" x 14".
    2. In large mixing bowl combine meat, onions, garlic, eggs, parsley, bread crumbs, chili powder, cumin, salt, pepper(s), and tomato paste. Shape into a large oval mound in center of prepared dish.
    3. Peel sweet potatoes and slice crosswise into 3/4" slices. Arrange slices around meatloaf.
    4. Slice all but one of the pineapple rings in half. Center the whole pineapple ring on top the meatloaf and arrange the halved pineapple rings on top of sweet potato slices. Sprinkle with Parmesan cheese (see Photo #2 of unbaked meatloaf.)
    5. Bake uncovered for about 1 1/4 to 1 1/2 hours, or until done.
