  • Mawmaw Tillery's Blackberry Jam Cake

    Ingredients

    • 6 x Large eggs
    • 1 1/2 stk butter
    • 2 c. sugar
    • 3/4 c. buttermilk
    • 1 tsp baking soda
    • 2 c. blackberry jam
    • 1 c. minced nuts
    • 1 c. raisins
    • 3 c. flour
    • 1 pch salt
    • 1 c. lowfat milk
    • 1 c. sugar
    • 1 c. coconut flakes
    • 3 x egg yolks beaten
    • 1 stk butter
    • 1 c. nuts

    Directions

    1. Mix Large eggs, sugar and butter together. Sift flour and salt into another bowl. In a third bowl, mix baking soda and buttermilk. Add in flour mix and buttermilk mix alternately to the egg mix. Mix this thoroughly by hand; don't use electric mixer. Add in jam and mix. Add in nuts and raisins till mixed. Pour into greased and floured cake pan. I use a bundt or possibly angel food cake pan. Bake at 350 degrees till toothpick comes out clean, around 20 min. Let cold, then turn out on serving plate.
    2. To make frosting, mix the butter in a saucepan. Add in lowfat milk, sugar and egg yolks. Cook till it comes to a boil or possibly thickens to desired consistency. Add in nuts and coconut flakes and mix. Remove from heat and frost cake.
    3. Amber Says: I never knew Mawmaw, as she passed away long before I was born. I have heard about how wonderful a cook she was and her recipes prove it.
