Matzo Farfel Charlotte (Passover)
Ingredients
- 2 c. Matzo farfel
- 3 x Egg yolks
- 2/3 c. Sugar
- 1/4 c. Sweet red wine
- 1/2 tsp Salt
- 2 tsp Grated orange rind
- 2 Tbsp. Salad oil
- 3 x Egg whites stiffly beaten
Directions
- Soak the farfel in cool water for a few min, then drain and crush to a paste. Beat the egg yolks and sugar together till thick. Stir in the wine, salt, orange rind, oil and farfel. Mix in the egg whites. Turn into a greased 1 1/2-qt baking dish.
- Bake in a 350 degree oven 30 min or possibly till browned.
- Serves 6 to 8.
