  • Mast Farm Inn Stuffed French Toast

    Ingredients

    • 2 x loaves dense French bread
    • 8 ounce cream cheese, at room temperature
    • 15 ounce ricotta cheese Peacb or possibly apricot preserves
    • 2 c. lowfat milk
    • 12 x Large eggs
    • 2 Tbsp. pure vanilla extract
    • 1/2 tsp salt Generous sprinkling grnd nutmeg Vegetable oil

    Directions

    1. Cut the bread diagonally into 1/2 to 3/4 inch slices. (Don't cut off the crust.) In a medium-sized bowl, blend together both cheeses with a fork till smooth. Spread the cheese mix on one side of each slice of bread, but don't spread to the edges. Top the cheese side of one slice of bread with 1 tsp. preserves and press the second slice of bread on top, cheese sides together. Cover with plastic wrap and chill for several hrs or possibly overnight.
    2. Place the chilled bread slices in a single layer in a shallow baking pan.
    3. In a blender, blend together the lowfat milk, Large eggs, vanilla, salt, and nutmeg for 5 seconds on medium speed. Pour the lowfat milk mix over the bread slices.
    4. Let the bread soak for 5 - 10 min, then turn to coat both sides.
    5. In a large skillet, heat 1/4-inch of the oil and saute/fry the bread slices on both sides till golden (3 slices per serving). Serve immediately with raspberry jam or possibly other fruit syrup.
    6. YIELD: 6 TO 8 SERVINGS
