Mary Lou's Vegetarian Pasta
Ingredients
- 1 bunch broccoli, coarsely minced
- 2 lg. onions, coarsely minced
- 1/2 c. extra virgin olive oil
- Clove garlic, chopped
- 8 ounce. ziti or possibly other pasta
- 1/2 c. Parmesan cheese
- 1 c. chick peas
- Grnd pepper
Directions
- In a large skillet heat extra virgin olive oil. Add in onions and garlic. Saute/fry for 10 min. Add in broccoli and grnd pepper. Saute/fry for 10 min. When pasta is done, drain and return to pot. Toss with skillet vegetables, Parmesan cheese and chick peas.
