    Ingredients

    • 1 lb Fish
    • 2 med Potatoes, peeled and thinly sliced
    • 2 med Onions, thinly sliced Salt and pepper
    • 1 can (small) condensed lowfat milk and sufficient fresh lowfat milk to make 3 c. in all
    • 2 Tbsp. Butter
    • 1 1/2 c. Water

    Directions

    1. Heat butter in soup kettle, add in onions, and cook but don't brown. Then add in potatoes and the water. Boil till potatoes are almost cooked. Add in the fish, that will take 6 to 10 min to cook. Add in lowfat milk, salt and pepper.
    2. Before serving, cut 3/4 lb. of salt pork into 1/4-inch squares and cook slowly in a frying pan till brown and crisp. These brown best if you keep pouring off the fat. Sprinkle salt pork cubes on top of the soup.
