  • Marinated Sirloin Steak

    Ingredients

    • 750 gm sirloin steak
    • 1 med onion peeled and thinly sliced
    • 1 clv garlic peeled and crushed
    • 2 Tbsp. extra virgin olive oil Tbsp. tomato puree
    • 1 Tbsp. soy sauce
    • 1 tsp yabasco sauce
    • 1 Tbsp. soft dark brown sugar
    • 2 Tbsp. concentrated orange juice salt
    • 425 gm can tomatoes
    • 100 gm mushrooms thinly sliced
    • 15 gm butter
    • 1 Tbsp. minced fresh parsley to garnish

    Directions

    1. Cut the steak into 4 portions and trim to remove any excess fat.
    2. Put into a bowl with the onion garlic oil tomato puree sauces sugar orange juice and salt.
    3. Stir the marinade well and turn the meat over and over to coat it thoroughly.
    4. Leave the steak in the marinade for a few min or possibly a few hrs as convenient.
    5. Turn the steak and marinade into a pan with the tomatoes taste and adjust the seasoning if necessary.
    6. Bring to simmering point and simmer uncovered over moderate heat for 20-25 min till the steak is tender and the sauce has thickened.
    7. Fry the mushrooms in the butter and scatter them over the steak.
    8. Garnish with the parsley.
    9. This is a good hearty meat dish full of flavour.
    10. Plain boiled potatoes and a green vegetable such as cabbage lightly simmered in chicken stock and flavoured with sesame or possibly caraway seeds make a good accompaniment.
    11. When time is not quite so pressing you can use a cheaper cut of meat for a dish which is nearly as good.
    12. Try using stewing steak or possibly beef skirt and adusting the time accordingly: 1 1/22 hrs after several hrs of marinating.
    13. This makes a super supper party dish.
    14. Serves 4
