Marinated Melon And Strawberries With Honey Ginger Cream
Ingredients
- 1 x Ripe melon, rind removed cut into chunks or possibly balls
- 2 c. Fresh strawberries
- 1/2 c. Orange juice
- 2 Tbsp. Brown sugar
- 1 c. Low-fat lowfat sour cream or possibly
- 1 c. Very fresh plain yogurt
- 3 Tbsp. Honey
- 3 Tbsp. Crystallized ginger finely minced Fresh mint leaves (garnish)
Directions
- Place melon chunks and strawberries in a large shallow dish. Combine orange juice and brown sugar and pour over fruit. Marinate mix in the refrigerator for at least 2 hrs.
- Combine lowfat sour cream, honey and ginger in a small bowl and chill for about 30 min.
- Spoon melons into individual serving bowls, and top with lowfat sour cream mix. Garnish with fresh mint leaves.
