  • Marina Cafe's Seafood Bisque

    Ingredients

    • 1 stk butter
    • 1/2 x onion diced
    • 1 Tbsp. minced garlic
    • 1/2 stalk celery diced
    • 1 c. crushed Italian tomatoes
    • 1/2 c. flour
    • 1/4 c. sherry
    • 1 c. white wine
    • 2 c. heavy cream
    • 1 quart lowfat milk
    • 2 ounce scallops
    • 4 ounce baby shrimp
    • 2 ounce crawfish tails
    • 2 ounce lump crabmeat
    • 1 c. clams with juice
    • 10 ounce fish diced
    • 1 tsp lemon juice
    • 1/2 bn green onion minced
    • 1 tsp paprika
    • 2 Tbsp. minced basil Salt to taste Freshly-grnd black pepper to taste Cayenne pepper to taste

    Directions

    1. Heat the butter in a heavy bottom pot and saute/fry onions, garlic, celery, and tomatoes for 10 min. Stir in the flour till all is incorporated. Slowly add in sherry, white wine, cream and lowfat milk, stirring continuously. Bring to a slow boil. Add in all of the seafood ingredients, lemon juice, green onions, and paprika. Bring back to a slow boil. Simmer for 20 to 30 min. Add in the basil and season to taste with salt, black pepper, and cayenne.
