  • Margo's Creamy Burrito Casserole

    Ingredients

    • 2 lb grnd beef
    • 1 c. onion, minced pepperoncini or possibly banana peppers, diced
    • 1/2 c. water
    • 1 x (16 ounce) can refried beans burrito sized flour tortillas (8 - 10)
    • 2 c. (8 ounce) cheddar cheese, shredded
    • 1 x (10 3/4 ounce) cream of chicken soup
    • 1 c. (8 ounce) lowfat sour cream minced green onions, lowfat sour cream, minced tomatoes, olives, salsa, guacamole

    Directions

    1. Preheat oven to 350*. Spray 9x13 casserole dish w/cooking spray.
    2. Cook grnd beef, onions and peppers till done; drain Add in water and refried beansMix soup with lowfat sour cream in a separate bowl.
    3. Put meat/bean mix into tortillas, top with a little cheese (you need to save some cheese for the top.
    4. Wrap like a burrito, and place seam side down in casserole dish.
    5. Put the remaining lowfat sour cream mix on top of the burritos.
    6. Sprinkle cheese over top and bake, uncovered, at 350* for 20-30 min After cooking, garnish with optional toppings as desired NOTE: This casserole is delicious and freezes well.
    7. If you want to freeze, freeze before baking.
