    If you like the Margarita Chicken at Cilli's , then you will love this recipe ! I make this recipe for my family once in a while. My son told me , just last night "Mommy, this is the bestest meal ever, I love you ! " He loves shrimp ; Can you tell?

    Ingredients

    • 4 chicken breast "butterflied"
    • 1 lb shimp
    • marinade:
    • 3/4 c margarita mix
    • 4 T lime juice
    • 2 T tequila
    • 2 1/2 T brown sugar
    • 1/2 c red onions
    • 3 cloves garlic "chopped"
    • 2 T green onions "chopped"
    • 3 T cilantro "chopped"
    • 1/2 t smocked paprika
    • 1/2 t ground cumin
    • 1 t lemon pepper seasoning
    • 1 t Chef-Paul Prudhomme's seasoning
    • poultry magic "separated into 1/2's t"
    • 1 T olive oil

    Directions

    1. Place all of the ingredients for the marinade, "except 1/2 t poultry seasoning", in a medium size bowl and stir well . Next butterfly the chicken breast ,rinse and place in a gallon zip lock bag. Now clean your shrimp and place in a quart zip lock bag. Pour 1/3 of the marinade into the shrimp bag and close bag. Pour the remaining marinade into the chicken and close bag. Place both bags into refrigerator for 45 min's or longer! Now drain the liquid from the bags and put into a small pot. Boil on medium heat until reduced down and stirring every few min's until it turns into a glaze. Meanwhile lite grill. and when ready place chicken on grill. Sprinkle 1/2 t poultry seasoning on top of chicken. Grill until edges of the breast are white. Then turn chicken over and place shrimp into a grilling pan and place onto grill! Cook chicken until juices are clear and shrimp about 8 min's until pink. Brush glaze onto the chicken and eat.
