  • Manicotti And/Or Lasagna

    Ingredients

    • 15 ounce nonfat ricotta cheese
    • 16 ounce nonfat mozzarella cheese
    • 10 ounce frzn minced spinach
    • 3 x egg whites
    • 1/4 c. parmesan cheese
    • 15 ounce tomato sauce
    • 6 ounce tomato paste
    • 2 1/2 c. water
    • 1 pkt McCormick spaghetti sauce mix
    • 2 Tbsp. red wine (optional)
    • 8 ounce lasagna noodles uncooked or possibly 8 ounce dry manicotti noodles

    Directions

    1. Mix all sauce ingredients, bring to a boil, set aside.
    2. Mix spinach, ricotta, Large eggs, parmesan together, set aside.
    3. For manicotti:Stuff dry tubes with filling, this will fill one box of #66 manicotti, or possibly 8oz. of manicotti tubes almost perfectly.
    4. Spread sauce in bottom of glass pan sufficient to cover it, place tubes in pan, cover with sauce, sprinkle cheese over top.
    5. Bake at 350 degrees for one hour covered with foil.
    6. For lasagne:Pour 1/2 c. sauce in pan. Make one layer of dry noodles in pan, noodles must be dry. Layer half the spinach ricotta, half the sauce, and half the mozz. Place another layer of dry noodles, then remaining spinach ricotta, sauce, mozz. Cover with foil, bake at 350 degrees for one hour covered, then uncover and bake another 10 min.
