Manhattan Vegetable Chowder
Ingredients
- 1 (2 1/2) can tomatoes
- 1 can condensed tomato soup
- 1 lg. sweet potato
- 2 to 3 potatoes, diced
- 2 stalks celery, diced
- 1/2 teaspoon thyme leaves (opt.)
- 1 onion
- 2 quart. water
- Salt, pepper (as desired)
- 1 pkg. frzn mixed vegetables
Directions
- Simmer together the tomatoes, water, tomato soup and sweet potatoes. Cut up fresh vegetables and add in to soup, with salt and pepper as desired. When sweet potato is soft, put through sieve and mix into soup. Add in frzn vegetables and thyme (optional). Continue to simmer till vegetables are tender.
