  • Manhattan Clam Chowder

    Ingredients

    • 2 oz Pork Bacon
    • 1 cup Spanish Onions
    • 1 cup Sliced Carrots
    • 1 cup Sliced stalks celery
    • 3 ech bay leaf
    • 1 tbsp Red Pepper Flakes
    • 1 tbsp dried tarragon
    • 2 cups diced cnd. tomatoes
    • 1 gal cnd. clam juice
    • 1 cup potatoes
    • 2 oz parsley
    • 2 cups cnd. chopped clams

    Directions

    1. In a tilt grill cook bacon over a medium heat until fat is rendered.
    2. Add onions and saute until translucent.
    3. Add carrots and celery and stir to coat.
    4. Add bay leaf, red pepper flakes and tarragon.
    5. Cook vegetables and seasonings until tender.
    6. Add tomatoes and clam juice.
    7. Bring to a simmer.
    8. Add potatoes and simmer until tender, about 20 minutes.
    9. Add parsley and clams.
    10. Simmer for 10 mintes more and serve.
