Manhattan Clam Chowder
Ingredients
- 2 oz Pork Bacon
- 1 cup Spanish Onions
- 1 cup Sliced Carrots
- 1 cup Sliced stalks celery
- 3 ech bay leaf
- 1 tbsp Red Pepper Flakes
- 1 tbsp dried tarragon
- 2 cups diced cnd. tomatoes
- 1 gal cnd. clam juice
- 1 cup potatoes
- 2 oz parsley
- 2 cups cnd. chopped clams
Directions
- In a tilt grill cook bacon over a medium heat until fat is rendered.
- Add onions and saute until translucent.
- Add carrots and celery and stir to coat.
- Add bay leaf, red pepper flakes and tarragon.
- Cook vegetables and seasonings until tender.
- Add tomatoes and clam juice.
- Bring to a simmer.
- Add potatoes and simmer until tender, about 20 minutes.
- Add parsley and clams.
- Simmer for 10 mintes more and serve.
