Mango Kale Slaw
I got this recipe from Central Market in San Antonio and LOVE IT! Ingredients
- 2 Bundles fresh Kale
- 1-2 mangos, skinned, seed removed and chopped
- 1/2 C red, green or sweet onion, thinly sliced
- San Pasqual Salad Dressing
- 1/2 C Marcona Almonds, coarsely chopped
- Salt and Pepper to taste
Directions
- Wash and trim the stem ends of the kale. Layer the leaves and roll them, so you can slice them as thin as possible. The stems are rather tender, so make sure you add those, too. Combine in a large bowl with the chopped mango, onion, almonds and enough dressing to coat. Season with salt and pepper, if desired. Cover and refrigerate for about 1/2 hour. Toss before serving.
