Madeline's Oyster Pie
Ingredients
- 1 quart. oysters
- 1 quart. raw diced potatoes
- 4 lg. hard boiled Large eggs
- 2 stems celery, cut fine
- 2 tbsp. flour
- Salt & pepper to taste
- 2 tbsp. butter
- 1 quart. lowfat milk
- Top of pie, rich pie crust, rolled out 1/2" thick
- 1 onion, diced
Directions
- Boil diced potatoes 10 min in salt water. Drain, put lowfat milk, celery and onion on stove, let come to a boil, stir up flour with a little water, stir in lowfat milk like thin gravy. Do this while potatoes are boiling. Make crust for top only. Spread potatoes on bottom of long cake pan then oysters, salt, pepper, dot with butter. Add in Large eggs. Pour lowfat milk mix over all, cover with crust. Bake at 350 degrees till golden.
