  • Luscious Lime Shrimp

    Ingredients

    • 3 Tbsp. Fresh lime juice
    • 1 x Green onion, minced
    • 2 Tbsp. Minced fresh cilantro
    • 1 tsp Chopped jalapeno chile
    • 1 tsp Extra virgin olive oil
    • 1/2 tsp Chopped garlic
    • 1/8 tsp Salt
    • 20 lrg Shrimp, (about 1 lb.) peeled and deveined
    • 1 Tbsp. Chopped red pepper
    • 20 x Cucumber slices

    Directions

    1. Stir together lime juice, green onion, cilantro, jalapeno, oil, garlic and salt in medium bowl. Toss shrimp with 2 Tbsp. of the dressing in another medium bowl. Cover and chill 30 min. Heat broiler. Broil shrimp about 3 inches from the heat source for 1 1/2 min per side till opaque. Immediately toss warm shrimp with remaining dressing and red pepper.
    2. Cold to room temperature. Arrange shrimp on cucumber slices.
    3. Makes 20appetizers.
