  • Lunchbox Raisin-Sour Cream Bars

    Ingredients

    • 2 cups natural raisins
    • 1 1/2 cup sour cream
    • 3 eggs, beaten
    • 1 cup sugar
    • 2 1/2 tsp cornstarch
    • 1 1/2 tsp cinnamon
    • 1 3/4 cup quick-cooking oats, uncooked
    • 1 3/4 cup flour
    • 1 cup brown sugar, packed
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1 cup butter, softened

    Directions

    1. Combine the raisins, sour cream, eggs, sugar, cornstarch, and cinnamon in a medium saucepan.
    2. Cook and stir over low heat until blended.
    3. Cool.
    4. In a large bowl, mix together the remaining ingredients until crumbly.
    5. Press half of the oat mixture into a greased and floured 13 x 9 inch baking pan.
    6. Spread with the raisin mixture.
    7. Crumble the remaining oat mixture over the top.
    8. Bake at 350 F for 30 minutes.
    9. Chill and cut into bars.
