    Wouldn’t you (or your child) love to open your lunch box today and find a nice little pizza surprise? This little gem is the easiest thing to make and it tastes wonderful hot from the oven or at room temperature. It would make a perfect lunch item or after school snack. It takes only a few minutes to throw together and they were gobbled up at my house in record time!

    Ingredients

    • 1 can refrigerated biscuits (10)
    • 10 pepperoni slices
    • 1 teaspoon Italian seasoning
    • 1/2 cup tomato sauce
    • 1/2 cup shredded cheese (your favorite)

    Directions

    1. Spray 10 cups in a muffin tin with cooking spray. Preheat oven to 425 degrees. Roll or pat out each biscuit until it is approximately 3 inches in diameter. Place in the muffin “cup” so that it lines the bottom and goes up the sides evenly. Mix together the Italian seasoning and the tomato sauce. Spoon into the 10 cups evenly using all the sauce. This is a little over a tablespoon per cup. Divide the cheese evenly between the muffin cups and top each one with a pepperoni slice. Bake for 15-20 minutes. Makes 10 servings.
