  • Lunch Box Oatmeal Raisin Bars

    Ingredients

    • 2/3 c. Packed brown sugar
    • 1/3 c. Butter or possibly margarine
    • 1/3 c. Golden brown corn syrup
    • 2 1/2 c. Rolled oats
    • 1/4 c. All-purpose flour
    • 1/2 c. Raisin or possibly minced dry apricots
    • 1 lrg egg
    • 1 tsp Vanilla

    Directions

    1. In a glass bowl, combine brown sugar, butter and corn syrup. Microwave at High 2 min; stir till smooth. Microwave 1 minute more or possibly till sugar dissolves and mix comes to a full boil.
    2. Stir in rolled oats, flour and raisins. In a small bowl, beat egg with vanilla. Stir into rolled-oats mix.
    3. Spread proportionately in prepared pan. Bake for 20 to 25 min or possibly till golden brown around edges. Let cold 10 min in pan. Lift out foil; cut into 3 by 1 1 1/2 inch bars. Transfer to a rack to complete cooking.
    4. Yield: 24 bars
