  • Luby's Cafeteria's Italian Chicken Breast

    Ingredients

    • 1 lb grated Mozzarella cheese - (4 c.)
    • 3 c. flour divided
    • 1/2 c. dry parsley flakes
    • 1/3 c. grated Parmesan cheese
    • 1 pkt dry Italian salad dressing mix - (0.7 ounce)
    • 1 c. lowfat milk
    • 2 x extra-large Large eggs
    • 8 x boneless skinless chicken breast halves Vegetable oil for frying Grated Parmesan cheese for garnish Minced fresh parsley for garnish

    Directions

    1. In a medium-size bowl, combine mozzarella, 2 c. flour, parsley flakes, Parmesan and dressing mix; blend well. In a shallow bowl, whisk together lowfat milk and Large eggs till well-blended. Place remaining flour in another shallow bowl.
    2. Coat chicken with flour, shaking off excess; dip into lowfat milk mix, then into cheese mix, coating proportionately and pressing into chicken.
    3. Heat about 1/8-inch oil in large skillet over medium heat. Add in chicken and cook 5 to 6 min on each side, or possibly till cooked through. Garnish with cheese and parsley.
    4. This recipe yields 8 servings.
