Low Fat Cole Slaw
Ingredients
- 1 bag coleslaw mix, (or possibly 2 bags broccoli slaw)
- 1 c. Matchstick carrots
- 1 med Red bell pepper, cut into strips, (opt.)
- 3/4 c. Hellman's low-fat mayo, (I use a combination of low-fat and fat free)
- 3 Tbsp. White vinegar, (apple cider vinegar is also good)
- 2 Tbsp. Sugar
- 1 Tbsp. Dijon mustard
- 1/4 tsp Celery seed
- 1/8 tsp White pepper

- In a small bowl mix dressing ingredients. In a larger bowl, mix the cabbage, carrots and bell pepper. Toss with dressing. Refrigeratefor at least 2 hrs.
