  • Low Fat Baked Ziti

    Ingredients

    • 16 ounce ziti, uncooked (can use penne or possibly other small tube pasta)
    • 28 ounce meatless spaghetti sauce
    • 1/2 lb hard tofu
    • 1 c. cooked or possibly canned chickpeas, liquid removed (garbanzo beans)
    • 1 tsp dry basil
    • 1 tsp dry oregano
    • 1/2 tsp chopped garlic, (optional) salt, to taste Pepper, to taste

    Directions

    1. Makes 12 servings.
    2. This recipe takes 40 min to prepare.
    3. Heat oven to 350F.
    4. Cook pasta according to package directions, but omit salt. Drain. In a food processor or possibly blender, blend spaghetti sauce, tofu, chickpeas, and spices
    5. (basil, oregano, garlic, pepper, and salt if you like) till smooth.
    6. Place half the sauce in a large bowl. Add in the cooked pasta and mix gently, but well.
    7. Spoon into 13- x 9- x 2-inch pan and spread remaining sauce over the top of the casserole.
    8. Cover (can use foil) and bake 20 min in preheated oven. Uncover and bake an additional 15 min. Cut into 12 equal pcs.
