  • Low Country Seafood Casserole

    Ingredients

    • This is a great way to enjoy the abundance of seafood we have here in the Carolinas. Since the seafood is already cooked, you just want to hot this through, just till it starts to bubble.
    • 3 lb cooked fresh seafood (shrimp, scallops, oysters, clams)
    • 1 c. cooked rice
    • 1/2 c. minced red pepper
    • 1 c. sliced mushrooms
    • 1 c. minced celery
    • 1/2 c. minced Vidalia onion
    • 3/4 c. cream
    • 1 can Cream of mushroom soup
    • 1 c. mayonnaise
    • 1 Tbsp. Worcestershire sauce White pepper (to taste)

    Directions

    1. Cook sea food, etc. in boiling water . Saute/fry peppers, onions, and mushrooms till tender. Toss all ingredients together and put in buttered baking dish.
    2. Cook at 375F, uncovered for 30-40 min or possibly till heated through.
    3. Serves 8.
