  • Low Carb Easy Egg Muffins

    Ingredients

    • 6 large eggs
    • 6 strips of bacon, cooked & diced
    • 1/3 c. shredded cheddar cheese**
    • 1/2 small onion, diced
    • 2 T water
    • salt & pepper to taste
    • Pam Fat Free cooking spray
    • Medium size c. cake/ muffin pan

    Directions

    1. Preheat oven to 3501. Cook bacon in microwave with paper towels to help absorb the excessive grease. Cook till bacon is almost well done. Diced into small pcs, then set aside.
    2. 2. In a small non-stick frying pan spray with Pam and saute' your onions till they are soft. Set aside.
    3. 3. In medium mixing bowl put together the large eggs, bacon, cheese, onion, water, and salt & pepper.
    4. 4. Spray cup cake/muffin pan with Pam and spoon in the mix evenly into all 6 compartments.
    5. Bake for 35 to 35 min. ENJOY!!
    6. ** Save some cheddar cheese to heat on top of the muffins before they are completely done.
    7. *** Feel free to add in any of your favorite low carb veggies.
