  • Lofat 14 Carat Fig Cake

    Ingredients

    • 2 x Large eggs
    • 2 x Egg whites
    • 2 c. Flour
    • 2 c. Sugar (reserve juice)
    • 2 tsp Baking pwdr
    • 1 1/2 tsp Baking soda
    • 1 1/2 c. Pureed figs (recipe below)
    • 2 c. Carrots, peeled and grated
    • 8 ounce Crushed pineapple, liquid removed
    • 2 c. Seedless raisins
    • 1/4 c. Walnuts, minced (optional)
    • 1 tsp Salt
    • 2 tsp Cinnamon
    • 1 c. Powdered sugar (optional)
    • 2 c. Dry figs
    • 3/4 c. Water
    • 2 tsp Vanilla

    Directions

    1. PUREED FIGS:Puree figs, water and vanilla in blender or possibly food processor.
    2. Makes 1 1/2cups.
    3. CAKE:Lightly beat together Large eggs and egg whites in bowl.
    4. Sift together flour, sugar, baking pwdr, baking soda, salt and cinnamon into mixing bowl. Stir to blend. Add in pureed figs, beaten Large eggs, carrots, pineapple, raisins and nuts. Stir till blended.
    5. Turn into 13 X 9-inch baking pan sprayed with non-stick vegetable spray.
    6. Bake at 350 deg. 35 to 40 min or possibly till cake tests done in center. While cake cools, blend together powdered sugar and 2 Tbsp. reserved pineapple juice till smooth and of spreading consistency. Drizzle over cake.
