Lobster Ceviche With Passion Fruit
Ingredients
- 2 x lobsters - (1 1/2 lbs ea) cooked, chilled, and shelled
- 1 x red onion julienned
- 2 x tomatoes concassed and julienned
- 2 x scallions sliced
- 2 x oranges segmented
- 2 c. mango nectar
- 2 Tbsp. lime juice
- 2 x passion fruits juiced
- 1 pch finely-minced cilantro Salt to taste Freshly-grnd black pepper to taste
- 1 x mango peeled, seeded, and thinly sliced
- 2 x grapefruits segmented
Directions
- Dice the lobsters into large pcs and place in a large mixing bowl. Add in the onion, tomatoes, scallions, and orange segments.
- In a separate bowl, combine the mango nectar, lime juice, and the passion fruit juice. Add in the juice mix to the lobster mix and season with cilantro, salt, and pepper, to taste.
- Arrange sliced mango and grapefruit segments on a plate and top with ceviche.
- This recipe yields 4 servings.
