  • Loaded Baked Potato Casserole

    This recipe is one of my favorites. It makes a great side dish, perfect for bringing to football parties (or any party) & is in general a good comfort food. It's a big hit every time I make it, as I'm sure it'll be a hit with your friends & family as well.

    Ingredients

    • 6 cups "prepared" mashed potatoes
    • ***I personally make mine with heavy whipping cream or evaporated milk instead of regular milk, I add 1 1/2 tsp. mashed roasted garlic, 1/3 cup cream cheese, plus butter, salt & pepper**
    • 1 cup Sour Cream
    • 12 slices Bacon (cooked & crumbled)
    • 1/2 cup Chives (chopped fine)
    • 1 cup Shredded Cheddar Cheese
    • jalapeno peppers to taste, sliced or diced (optional)

    Directions

    1. Spoon mashed potatoes into lightly greased casserole dish. Cover with sour cream. Sprinkle bacon, then chives & jalapeno peppers. Cover with cheddar cheese.
    2. Bake at 350º for 30 minutes or until thoroughly heated & cheese is completely melted.
