  • LM's Southern Cornbread

    My husband's father's recipe for good old fashion southern cornbread - MUST be cooked in a cast iron skillet (seasoned).

    Ingredients

    • 2 cups cornmeal
    • 2 cups flour
    • 8 tsp baking powder
    • 1/4 cup sugar
    • 2 cups buttermilk (can use milk)
    • 2 eggs
    • 1/2 cup BACON grease (NOT OIL)

    Directions

    1. Mix together dry ingredients
    2. Preheat oven to 400*
    3. Add eggs & milk to cornmeal mixture mix well (do not beat!)
    4. Place grease into skillet and put into hot oven.
    5. When grease is HOT, pour into cornbread mixture and mix (again - DO NOT BEAT) Pour into to hot skillet.
    6. Bake at 400* for 30-40 minutes - toothpick test after 30 minutes
