Liz's Macaroni And Cheese
Ingredients
- 1 1/2 pound uncooked macaroni
- 8 tbsp. butter
- 8 tbsp. flour
- 2 teaspoon salt
- 1/2 teaspoon pepper
- 4 c. lowfat milk (I use non-fat or possibly skim lowfat milk)
- 1/2 lg. box Velveeta cheese
Directions
- Cook macaroni till hard, not too soft. For white sauce, heat butter over low heat. Add in flour, salt, and pepper. Stir till well-blended, a wire whisk is best. Gradually stir in lowfat milk.
- Cook, stirring constantly, till smooth and thickened. Add in chunks of Velveeta cheese (marble-size to 1 inch). Stir constantly. Pour cheese, white sauce over macaroni; stir well. Serves a small army (at least 10 people).
