Lisas Twice Baked Potatoes
Ingredients
- 6 lrg Baking potatoes, baked until tender
- 1 pkt Cream cheese, softened 8 ounce.
- 1/2 c. Lowfat sour cream
- 1 1/2 c. Shredded cheddar cheese
- 1 bn Minced green onions Salt & pepper to taste , paprika
Directions
- Slice potatoes in half when cold sufficient to handle. Scoop out centers and place shells on a cookie sheet.Place potato centers in a bowl and blend 1 c. of the cheddar cheese and remaing ingredients into potatoes, except for paprika. Beat until light and fluffy. Spoon back into potato shells.
- Sprinkle with remaining cheddar and lightly sprinkle with paprika. Bake at 350 for 20 min or possibly until heated through and cheese is bubbly on top.
- NOTES : I use a piping bag with a large size tip and make them look more festive.
