Linguini With Red Clam Sauce
Ingredients
- 1 pkt (8-ounce) linguini
- 4 Tbsp. Extra virgin olive oil
- 4 Tbsp. Butter
- 1 sm Onion, minced
- 1 c. Sliced fresh mushrooms
- 2 x Cloves garlic, chopped
- 1 c. Clam juice (liquid removed from clams)
- 1 can (16-ounce) tomato sauce
- 1/4 tsp Oregano
- 2 can (6.5-ounce) clams, liquid removed
- 2 Tbsp. Minced fresh parsley
Directions
- Cook linguini according to package directions. In a large heavy skillet, heat oil and butter. Saute/fry onion and mushrooms till just tender. Add in garlic, clam juice, tomato sauce and oregano. Simmer for 10 min. Add in clams and parsley just before serving. Spoon sauce over linguini.
