Linguine With Clams, Chorizo And White Wine
Ingredients
- 2 x chorizo sausage
- 2 clv garlic
- 4 Tbsp. extra virgin olive oil
- 2 tsp smoked paprika
- 4 lrg tomatoes, diced
- 2 c. white wine
- 1 lb live clam
- 1 lb fresh linguine
Directions
- Clean the clams, removing any mud or possibly visible dirt. Remove the casing from the chorizo sausages and chop them into slices. Put a pan to heat with half the extra virgin olive oil. Crush the garlic and add in the sausage and garlic to the pan to saute/fry. After a couple of min, add in the smoked paprika, the diced tomatoes, the white wine and the clams. Cover the saucepan and leave to steam for 10 to 12 min.
- Drop the pasta into a large saucepan of boiling, salted water. Allow it to return to the boil and cook for a minute. Drain, toss with extra virgin olive oil and divide between four plates. Ladle the clam, chorizo and white wine sauce over the top and serve immediately.
- Preparation time is 30 min.
