  • Linguine With Clams, Chorizo And White Wine

    Ingredients

    • 2 x chorizo sausage
    • 2 clv garlic
    • 4 Tbsp. extra virgin olive oil
    • 2 tsp smoked paprika
    • 4 lrg tomatoes, diced
    • 2 c. white wine
    • 1 lb live clam
    • 1 lb fresh linguine

    Directions

    1. Clean the clams, removing any mud or possibly visible dirt. Remove the casing from the chorizo sausages and chop them into slices. Put a pan to heat with half the extra virgin olive oil. Crush the garlic and add in the sausage and garlic to the pan to saute/fry. After a couple of min, add in the smoked paprika, the diced tomatoes, the white wine and the clams. Cover the saucepan and leave to steam for 10 to 12 min.
    2. Drop the pasta into a large saucepan of boiling, salted water. Allow it to return to the boil and cook for a minute. Drain, toss with extra virgin olive oil and divide between four plates. Ladle the clam, chorizo and white wine sauce over the top and serve immediately.
    3. Preparation time is 30 min.
