Lime And Sour Cream Pie (Bon Appetit/July 1983)
Ingredients
- 3/4 c. Sugar
- 3 tsp Cornstarch
- 2 1/2 tsp Fresh. grated peel of 2 lime
- 1/3 c. Fresh lime juice
- 1 c. Half and half
- 1/4 c. Unsalted butter, room temp.
- 1 c. Lowfat sour cream
- 1 x Baked 9" pie shell
- 1 tsp sugar (1 to 2)
- 1 c. Whipping cream
Directions
- Combine 3/4 c. sugar with cornstarch and lime peel in medium saucepan and mix well. Add in lime juice and stir till smooth. Blend in half and half and butter.
- Place over medium heat and stir till mix thickens and starts to boil,about 10 to 12 min.
- Remove from heat and let cold, stirring occasionally.
- Mix in lowfat sour cream. Turn mix into baked pie shell. Combine whippingcream and 1 to 2 Tablespoons sugar in medium bowl and whip to soft peaks. Spread atoppie and serve.
