  • Light Lemon Pudding Parfait

    Ingredients

    • 4 Tbsp. Agar flakes
    • 2 c. Apple juice
    • 1 1/2 c. Syrup, rice, brown
    • 1/4 c. Syrup, maple
    • 1/4 tsp Turmeric
    • 1/8 tsp Sea salt
    • 4 Tbsp. Kuzu or possibly arrowroot pwdr
    • 1/2 c. Water
    • 2 tsp Vanilla extract
    • 1 1/2 tsp Lemon rind
    • 3/4 c. Lemon juice
    • 1/4 c. Coconut, shredded, unsweet
    • 6 x Strawberries, fresh, sliced

    Directions

    1. In a 1-quart saucepan, mix first 6 ingredients together.
    2. Bring to a boil and cook, stirring frequently, over medium heat till agar has dissolved, about 5 - 10 min.
    3. In a separate bowl, mix together kuzu, water and vanilla. Add in to juice mix. Cook till luzu clears and liquid has thickened slightly.
    4. Remove from heat, and stir in lemon rind and juice.
    5. Pour into parfait or possibly other glasses. Let cold till set, about one hour.
    6. Garnish with coconut and strawberry slices.
    7. Serve at room temperature or possibly refrigeratein freezer for 15 to 20 min.
