Light Lemon Pudding Parfait
Ingredients
- 4 Tbsp. Agar flakes
- 2 c. Apple juice
- 1 1/2 c. Syrup, rice, brown
- 1/4 c. Syrup, maple
- 1/4 tsp Turmeric
- 1/8 tsp Sea salt
- 4 Tbsp. Kuzu or possibly arrowroot pwdr
- 1/2 c. Water
- 2 tsp Vanilla extract
- 1 1/2 tsp Lemon rind
- 3/4 c. Lemon juice
- 1/4 c. Coconut, shredded, unsweet
- 6 x Strawberries, fresh, sliced
Directions
- In a 1-quart saucepan, mix first 6 ingredients together.
- Bring to a boil and cook, stirring frequently, over medium heat till agar has dissolved, about 5 - 10 min.
- In a separate bowl, mix together kuzu, water and vanilla. Add in to juice mix. Cook till luzu clears and liquid has thickened slightly.
- Remove from heat, and stir in lemon rind and juice.
- Pour into parfait or possibly other glasses. Let cold till set, about one hour.
- Garnish with coconut and strawberry slices.
- Serve at room temperature or possibly refrigeratein freezer for 15 to 20 min.
