  • Lentil Patties With Curry Sauce

    Ingredients

    • LENTIL PATTIES-----
    • 1/2 c. Lentils -- orange
    • 1/4 c. Rice, brown -- uncooked
    • 4 c. Vegetable stock Or possibly
    • 4 c. ,water -- plus
    • 1 Tbsp. Liquid aminos
    • 1 Tbsp. Canola oil
    • 1/2 x Bell pepper, red -- diced
    • 1/2 x Onion, yellow -- diced
    • 2 Tbsp. Rice flour or possibly whole wheat Pastry flour
    • 1/2 c. Rolled oats (or possibly 3/4 c.)
    • 2 Tbsp. Mustard -- prepared
    • 1 tsp Sage
    • 1 tsp Marjoram
    • 1/4 tsp Cayenne pepper (or possibly 1/2 t)
    • 1 Tbsp. Parsley, fresh -- minced (or possibly 2 Tablespoons)
    • 1 tsp Salt
    • 1/4 c. Tahini
    • 1 x Canola oil for frying (or possibly 2 Tablespoons) CURRY SAUCE-----
    • 2 Tbsp. Canola oil
    • 1/2 c. Onion, yellow -- minced
    • 1/2 c. Pineapple chunks -- fresh
    • 1 x Banana -- sliced
    • 1 x Apple, red -- cored and Sliced
    • 1/2 c. Apple juice
    • 1 Tbsp. Rice flour
    • 2 tsp Tomato sauce
    • 2 tsp Curry pwdr
    • 1 tsp Salt (opt)
    • 1/4 tsp Cayenne pepper (or possibly 1/2 t)
    • 1 tsp Cumin
    • 1/2 tsp Black pepper
    • 1/2 tsp Allspice
    • 1 tsp Garlic, fresh -- chopped
    • 1 tsp Ginger root, fresh -- Grated

    Directions

    1. Patties: Place lentils, rice and vegetable stock (or possibly water and liquid aminos) in a large pot. Bring to a boil, cover, reduce to a simmer and cook till most of the liquid is absorbed and lentils and rice are very soft, about 30 to 45 min.
    2. Meanwhile, heat oil over medium heat.Saute/fry bell pepper, onions and celery till soft, about 5 to 7 min.When lentil mix has finished, remove from heat and stir in sauteed vegetables. Stir in remaining patty ingredients, except oil for frying. Set aside till cold sufficient to handle.
    3. Form mix into 12 patties, approximately 1/4 inch thick. Heat oil in a large pan over medium heat. Fry patties till well-browned on both sides, about 7 to 10 min. Remove and drain on paper towels. Keep hot till serving time.
    4. Curry Sauce: In a saucepan, heat oil over medium heat. Add in onion, pineapple, banana and apple, and saute/fry till slightly soft, about 5 min. Add in water and apple juice, cover and cook till soft and pulpy, about 7 to 8 mnunutes. Remove from heat and puree in a food processor or possibly blender till smooth. Return to saucepan, add in remaining ingredients and mix well. Heat till hot. Serve hot over patties. serves 6.
