Lentil Bolognese
Pasta with lentils, onion, carrots. Vegetarian Ingredients
- Pasta for 2 (~6 oz)
- 1 pouch of madras lentils (10 oz) (or other lentils, but will require cooking lentils differently)
- 3 cloves of garlic
- 2 carrots
- 1 yellow onion
- 2 tablespoons of butter
- 2 tablespoons of tomato paste
- grated parmesan
- cheese (optional)
Directions
- Wash / Dry Produce
- Peel, Mince Garlic
- Dice Carrots, Onion
- Heat Pan with layer of oil (medium high)
- add garlic, carrots, onion, salt and pepper
- cook 4-6 minutes
- microwave pouch of madras lentils
- add tomato paste, cook 1-2 minutes
- add lentils (add 1 cup of water if not using madras)
- simmer 10-12 minutes (start pasta simultaneously)
- add pasta to boiling water
- cook pasta 9-11 minutes. drain, but leave a little water
- add pasta, butter to pan (optionally add cheese)
- cook 1-2 minutes
- turn off heat
- add salt and pepper
- add grated parmesan
