  • Lentil Bolognese

    Pasta with lentils, onion, carrots. Vegetarian

    Ingredients

    • Pasta for 2 (~6 oz)
    • 1 pouch of madras lentils (10 oz) (or other lentils, but will require cooking lentils differently)
    • 3 cloves of garlic
    • 2 carrots
    • 1 yellow onion
    • 2 tablespoons of butter
    • 2 tablespoons of tomato paste
    • grated parmesan
    • cheese (optional)

    Directions

    1. Wash / Dry Produce
    2. Peel, Mince Garlic
    3. Dice Carrots, Onion
    4. Heat Pan with layer of oil (medium high)
    5. add garlic, carrots, onion, salt and pepper
    6. cook 4-6 minutes
    7. microwave pouch of madras lentils
    8. add tomato paste, cook 1-2 minutes
    9. add lentils (add 1 cup of water if not using madras)
    10. simmer 10-12 minutes (start pasta simultaneously)
    11. add pasta to boiling water
    12. cook pasta 9-11 minutes. drain, but leave a little water
    13. add pasta, butter to pan (optionally add cheese)
    14. cook 1-2 minutes
    15. turn off heat
    16. add salt and pepper
    17. add grated parmesan
