Lemony Pesto
This is a basic pesto recipe, but a added juice of one lemon & chopped walnuts instead of pine nuts because they are a lot less expensive. The lemon gives it a fresh flavor and keeps the pesto color from darkening when stored in fridge. Ingredients
- 3 large cloves garlic
- 1/4 cup chopped walnuts
- Salt & freshly ground pepper to taste
- 3 cups basil leaves
- 1/2 good quality extra virgin olive oil
- 3/4 cup freshly grated parmesan cheese
- juice of one lemon
Directions
- In a food processor, blend garlic, walnuts, salt & pepper
- Process in basil leaves
- Drizzle in olive oil & process well until creamy & thick
- Add cheese & lemon juice
- Season with salt & pepper
