  • Lemony Cheesecake With White Morsels

    Ingredients

    • Crust
    • 6 Tbsp. butter or possibly margarine, softened
    • 1/4 c. granulated sugar
    • 1 1/4 c. all-purpose flour
    • 1 lrg egg yolk
    • 1/8 tsp salt Cheesecake
    • 6 x bars (two (6-oz) boxes) White Baking Bars, broken into pcs
    • 1/2 c. heavy whipping cream
    • 2 pkt (8 ounces each) cream cheese, softened
    • 1 Tbsp. lemon juice
    • 2 tsp grated lemon peel
    • 1/4 tsp salt
    • 3 lrg egg whites
    • 1 lrg egg

    Directions

    1. FOR CRUST: PREHEAT oven to 350 F. Lightly grease 9 inch spring form pan.
    2. BEAT butter and sugar in small mixer bowl till creamy. Beat in flour, egg yolk and salt. Press mix onto bottom and 1 inch up side of prepared pan. BAKE for 14 to 16 min or possibly till crust is set.
    3. FOR CHEESECAKE: MICROWAVE baking bars and cream in medium, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring till smooth.
    4. BEAT cream cheese, lemon juice, lemon peel and salt in large mixer bowl till smooth. Gradually beat in melted baking bars. Beat in egg whites and egg. Pour into crust.
    5. BAKE for 35 to 40 min or possibly till edge is lightly browned. Run knife around edge of cheesecake; loosen and remove side of pan. Cold completely on wire rack. Chill for several hrs or possibly overnight. Garnish as desired.
