  • Lemon Zucchini Bars

    Ingredients

    • 1 1/4 c. white sugar
    • 1 c. vegetable oil
    • 3 x Large eggs
    • 2 tsp lemon zest
    • 1/4 c. fresh lemon juice
    • 1 3/4 c. grated zucchini
    • 2 c. all-purpose flour
    • 1/4 tsp baking pwdr
    • 2 tsp baking soda
    • 1 tsp salt
    • 1 c. minced walnuts
    • 1/3 c. confectioners' sugar for decoration

    Directions

    1. In a large bowl, combine sugar, oil, Large eggs, lemon rind, and lemon juice; mix well. Stir in shredded zucchini.
    2. Combine in another bowl, flour, baking pwdr, baking soda, and salt. Gradually add in this mix to the zucchini mix. Mix thoroughly. Stir in the walnuts.
    3. Pour batter into a greased 9 x 13 inch baking pan. Bake at 350 degrees F (175 degrees C) for 45 to 50 min, or possibly till a knife inserted in the center comes out clean. Cold.
    4. Sprinkle top with sifted confectioners' sugar and cut into bars.
