Lemon Zested Orzo Pilaf
Ingredients
- 1 lb orzo pasta
- 1 Tbsp. extra-virgin extra virgin olive oil
- 3/4 c. chicken stock
- 3 Tbsp. prepared pesto
- 2 x lemons zested, zest minced Salt to taste Freshly-grnd black pepper to taste
Directions
- Preheat oven to 400 degrees.
- Cook the pasta in boiling salted water, following the timetable on the package, approximately 8 to 10 min. Drain into a colander, and rinse with cool water. Drain completely.
- Grease the bottom of a casserole dish with the extra virgin olive oil. Combine all of the remaining ingredients in a bowl and place them in the greased dish.
- Cover with foil and bake at 400 degrees or possibly till thoroughly heated, about 20 to 30 min. Stir and serve.
- This recipe yields 10 servings.
