Lemon Sugar Cookies
Christmas Holiday Cheer Great for the Holiday Cookie Platter Ingredients
- 1 1/2 cups (3 sticks) unsalted butter, softened
- 1 cup sugar
- 2 1/2 tsp lemon extract
- 1 tsp vanilla extract
- 1/2 tsp salt
- 4 cups flour
Directions
- In a large bowl, beat the butter and sugar until fluffy
- Beat in the egg, lemon and vanilla extracts, and salt
- With a mixer on low speed, beat in the flour in 2 additions until blended
- Divide the dough into thirds
- Shape each third into a disk
- Wrap into plastic wrap
- Refrigerate until firm enough to roll, about 2 hours
- Preheat the oven to 350 F
- Roll 1 disk of the dough at a time, on a lightly floured surface using a floured rolling pin, to 1/4 inch thickness
- Cut out desired shapes with cookie cutters
- Re-roll the scraps
- Place 1 1/2 inches apart onto ungreased cookie sheets
- Bake for 8 to 10 minutes or until golden
- Cool on wire racks
