    Christmas Holiday Cheer Great for the Holiday Cookie Platter

    Ingredients

    • 1 1/2 cups (3 sticks) unsalted butter, softened
    • 1 cup sugar
    • 2 1/2 tsp lemon extract
    • 1 tsp vanilla extract
    • 1/2 tsp salt
    • 4 cups flour

    Directions

    1. In a large bowl, beat the butter and sugar until fluffy
    2. Beat in the egg, lemon and vanilla extracts, and salt
    3. With a mixer on low speed, beat in the flour in 2 additions until blended
    4. Divide the dough into thirds
    5. Shape each third into a disk
    6. Wrap into plastic wrap
    7. Refrigerate until firm enough to roll, about 2 hours
    8. Preheat the oven to 350 F
    9. Roll 1 disk of the dough at a time, on a lightly floured surface using a floured rolling pin, to 1/4 inch thickness
    10. Cut out desired shapes with cookie cutters
    11. Re-roll the scraps
    12. Place 1 1/2 inches apart onto ungreased cookie sheets
    13. Bake for 8 to 10 minutes or until golden
    14. Cool on wire racks
