    Ingredients

    • 1/2 cup butter, softened
    • 2/3 cup sugar
    • 1 egg
    • 1/4 cup lemon juice
    • 1 tablespoon grated lemon peel
    • 1 3/4 cups flour
    • 1/4 tsp baking soda
    • 1/4 tsp cream of tartar
    • 1/4 tsp salt
    • 1/2 cup finely chopped almonds
    • Confectioners' sugar

    Directions

    1. In a mixing bowl, cream the butter and sugar
    2. Beat in the egg
    3. Add the lemon juice and peel
    4. Combine the flour, baking soda, cream of tartar and the salt
    5. Stir into the creamed mixture
    6. Add the almonds
    7. Cover and refrigerate the dough for at least 1 hour or overnight.
    8. Roll into 1-inch balls.
    9. Place on ungreased baking sheets.
    10. Bake at 350 F for 10-12 minutes or until the bottoms are lightly browned.
    11. The Cookies Will Not Brown On Top.
    12. Remove immediately to wire racks
    13. Cool for 5 minutes, then roll in confectioners' sugar
