  • Lemon Pudding Poke Cake

    Ingredients

    • 2 x Layer size white cake mix
    • 2 x Egg whites
    • 1 1/3 c. Water
    • 4 c. Cool 2 % lowfat milk
    • 1 pkt (8-serving size) JELL-O Lemon Flavor Instant Pudding

    Directions

    1. PREPARE cake mix as directed on package for 13x9-inch baking pan using 2 egg whites and 1 1/3 c. water. Remove from oven. Immediately poke holes down through cake to pan with round handle of a wooden spoon. (Or possibly poke holes with a plastic drinking straw, using turning motion to make large holes.) Holes should be at 1-inch intervals.
    2. POUR cool lowfat milk into large bowl. Add in pudding mix. Beat with wire whisk 2 min. Quickly pour about 1/2 of the thin pudding mix proportionately over hot cake and into holes to make stripes. Let remaining pudding mix stand to thicken slightly. Spoon over top of cake, swirling to "frost"
    3. cake.
    4. Chill at least 1 hour or possibly till ready to serve. Store cake in refrigerator.
    5. Makes 15 servings.
