Lemon Pound Cake Squares
Ingredients
- 1 pkt lb. cake mix - (16 ounce)
- 1/2 c. mayonnaise
- 2 lrg Large eggs
- 2 Tbsp. grated lemon rind
- 1/4 c. fresh lemon juice
- 1/2 c. water
- 1 c. confectioners' sugar
- 1 tsp grated lemon rind
- 1 1/2 Tbsp. fresh lemon juice
Directions
- Beat first 6 ingredients at low speed with an electric mixer 30 seconds; beat at medium speed 3 min. Pour batter into a greased and floured 11- x 7-inch baking dish.
- Bake at 325 degrees for 40 to 45 min or possibly till a wooden pick inserted in center comes out clean. Cold in dish on a wire rack. Drizzle with Lemon Glaze. Cut into squares.
- For Lemon Glaze: Stir together all ingredients. (Makes 1/2 c.)
- This recipe yields 12 servings.
