  • Lemon Lime Soda Cake

    Ingredients

    • 1 pkt Lemon cake mix
    • 1 pkt Instant pudding - Coconut Or possibly- pineapple cream
    • 10 ounce Lemon-lime soda
    • 3/4 c. Veg. oil
    • 4 x Large eggs
    • 1 1/2 c. Sugar
    • 2/3 c. Flour
    • 2 x Egg yolks
    • 1 c. Flaky coconut
    • 1/2 c. Butter or possibly margarine
    • 15 ounce Crushed pineapple, NOT drain

    Directions

    1. Combine cake mix, pudding mix, lemon-lime soda and oil; mix well. Add in Large eggs, one at a time, beating after each addition. Pour into greased and floured 9x13" baking pan. Bake at 350 F for 45-50 min.
    2. FROSTING: In saucepan mix sugar, flour and pineapple till flour is moistened. Stir in egg yolks, coconut and butter. Cook till very thick.
    3. Spread over cake while both are warm.
