Lemon~Blueberry Creamcheese No Bake Bars
Fabulous dessert your family will love. Ingredients
- 2 sleeves Graham Crackers
- 3 tablespoons melted butter
- 2 Lemons juice, a bit of zest and shaved thinly rind
- 16 ounces Softened cream cheese
- 1 cup confectioners sugar + 3 tablespoons for icing, 2 drops yellow food coloring, lemon juice (one tablespoon)
- 3 tablespoons heavy cream
- 1/4 cup Fresh Blueberries, to garnish the top
Directions
- In the bowl of a stand mixer using the paddle attachment add softened cream cheese, confectioners sugar, heavy cream, lemon zest, juices and mix to combine
- In a bowl add crushed graham crackers and melted butter stir to combine
- In an 8 x 8 inch dish add graham crackers and using a spatula press down to compact crushed cracker crust, add Cream cheese mixture and smooth out with an offset spatula
- Icing: In a small bowl add confectioners sugar, yellow food coloring, lemon juice and stir to combine, spread over the top of bars
- Promptly refrigerate for 1-2 hours.
- To serve: Cut into desired size squares, add fresh blueberries on top, and lemon rind
- Enjoy!
