Leek And Turnip Soup (Milchig)
Ingredients
- 4 x Turnips, cut in small chunks, up to 5
- 3 sm Potatoes, also in chunks
- 3 x Leeks, white parts only
- 1 x Clove garlic, chopped
- 1/4 c. Parsley, minced
- 1/2 tsp Thyme
- 1 Tbsp. Butter, (I used extra virgin olive oil)
- 1 1/2 tsp Salt
- 6 c. Water, (I added some pareve soup mix)
- 1/2 c. Lowfat milk
Directions
- Saute/fry the first 6 ingredients in the butter for 5 min. Add in the water and salt, and simmer for 30 min. Puree in a blender or possibly food processor, add in the lowfat milk, and reheat. Enjoy!
