  • Lazy Daisy Cake And Frosting

    Ingredients

    • 1 1/4 c. Boiling water
    • 1 c. Quaker or possibly Mother's Oats-quick or possibly old Fashioned, uncooked
    • 1/2 c. Butter or possibly margarine, softened
    • 1 c. Sugar
    • 1 c. Brown sugar, firmly packed
    • 1 tsp Vanilla
    • 2 x Large eggs
    • 1 1/2 c. Sifted all-purpose flour
    • 1 tsp Baking soda
    • 1/2 tsp Salt
    • 3/4 tsp Cinnamon
    • 1/4 tsp Nutmeg
    • 1/4 c. Butter or possibly margarine, melted
    • 1/2 c. Brown sugar, firmly packed
    • 1/3 c. Minced walnuts
    • 3/4 c. Shredded or possibly flaked coconut
    • 3 Tbsp. Ginger ale

    Directions

    1. CAKE:Pour boiling water over oats; cover and let stand 20 min. Beat butter till creamy; gradually add in sugars and beat till fluffy. Blend in vanilla and add in Large eggs. Add in oat mix. Mix well. Sift together flour, soda, salt and spices. Add in to creamed mix. Pour batter into well greased and floured 9-inch square pan. Bake at 350 for 50 to 55 min. Don't REMOVE CAKE FROM PAN.
    2. You may also bake in 13 x 9-inch pan for 30 min.
    3. FROSTING: DOUBLE INGREDIENTS FOR 13 x 9-inch CAKE. Combine all ingredients, spread proportionately over cake, and broil till frosting becomes bubbly. Cake may be served hot or possibly cool.
